This is what I’m calling an “Elevated Walking Tacos” recipe. I’ve made this delicious concoction for many years now and it’s always a big hit. I was inspired many years ago by the ever popular idea of putting a bean mixture into small personal sized bags of various chips and topping it with cheese, sour cream, etc.. That is what we commonly think of when we hear “Walking Tacos”. It sounded good, but not too healthy or conveinent for my large family. Eating out of little bags looks fun, but I need big meals that will fill a plate and then some.
You can elevate most any meal by adding fresh flavor from homegrown ingredients and organic alternatives whenever you get the chance. Though I still use corn chips most of the time (not very healthy), you can also use organic tortilla chips instead. Of course, you can certainly use non organic versions of anything in the list below, but this is what I typically use. On average we probably eat this about once a month in our home. This recipe can be easily multiplied for parties or large groups.
Ingredients:
- 1 pound organic grass fed ground beef (or any beef of your choice)
- 2-3 Tablespoons of your favorite chilli seasoning or a 1 to 1 and a half oz. packet.
- 4 cans of organic chilli beans
- 1 can organic black beans (rinsed and drained)
- 1 7oz. can of fire roasted green chiles
- 1 ~14.5oz can/jar of organic diced tomatoes
- 1/4 tsp. of ground black pepper
- ~1/8 tsp. of salt to taste
- 2 large bags of Fritos/corn chips or tortilla chips
- Optional: some chopped green onions, shredded med. cheddar cheese (or other), and sour cream to top it off.
Directions:
1.) Brown beef in large skillet, drain excess fat and return to pan.
2.) Next, add beans, chiles, tomatoes, chilli seasoning, salt and pepper to the skillet with the beef and stir.
3.) Heat mixture, until hot and bubbly, reduce to simmer for about 10 minutes.
4.) Now, just plate a layer of chips and top with a heaping spoonful of beef and bean mixture and add desired toppings. There you have it, a sit down dinner, that’s easy and delicious.
