Broccoli and Cheese Soup

Here is a delicious and easy to make Broccoli and Cheese Soup.  I have altered the ingredients for this soup through the years until coming up with this final recipe, which is a household favorite.  It’s creamy but not heavy, the perfect level of cheesiness, and full of flavor. Served with a side of artisian homemade bread, I feel spoiled. I love that this soup doesn’t take much time to make, it can easily be prepared on a busy week night.  I also love to use as many fresh/organic ingredients as possible, but when they’re not availbale it’s still a super yummy comfort food for any occasion (as if you need one).  

Ingredients

  • 1 and a half cups of organic chicken broth
  • 3 Tablespoons of chopped onion (small dices)
  • 2 Tablespoons of butter
  • 2 cups of shredded Sharp Cheddar cheese
  • 1 cup of whole milk
  • 2 cups of heavy whipping cream
  • 1 package of frozen or fresh broccoli florets or a mix of cauliflower and broccoli cooked until just tender.
  • salt and pepper to taste
  • ground Cayenne pepper (optional)

Directions

1. Saute onion in butter in large pot over stove.

2.  Next, add chicken broth and stir on low heat.  

3.  Add shredded cheese and stir until melted.

4.  Now whisk in milk and heavy cream until combined.

5.  Stir in broccoli and and let simmer til hot and creamy.

6. Add a trivial amount of salt and cracked or ground black pepper to taste 

7. Optional:  I add a very small pinch of ground Cayenne to each bowl.
