If you need a tasty Thanksgiving side dish, here is an easy and delicious sweet corn casserole recipe for you. It’s really more like corn casserole and corn cake got married and had a baby. I grew up on old fashioned southern style cornbread. If you did too, then that means you know it was not sweet. However, I have to say, my husband makes a pretty good traditional homemade cornbread that pairs great with a pot of ham and beans. It’s very similar to what my Great Aunt would make.
I believe the secret to most good food is simple, quality ingredients. Have you ever read the ingredients on a box of Jiffy cornbread mix? Many years ago I did and if it’s still the same, it’s not good. Though making meals homemade is a the best way to control what goes in your food, I do use a box mix for this simple corn casserole recipe. Don’t worry, it’s not Jiffy.
Over the years my affinity for southwestern food has grown. A delicious corn cake is something to be desired. I started making sweet cornbread for most of our side dishes many years ago and rarely go back unless a recipe needs it (like our old fashioned corn bread dressing). Or if a pot of ham and beans happen to appear (my husband makes it).

Ingredients:
- One 15oz. box of “Fleischmann’s Simply Homemade Baking Mix” (cornbread) or a box of “Krusteaz Honey Cornbread Mix”
- 1 and a half cup of sour cream
- 1 and a half sticks of real butter
- 1 can of cream corn
- 1 can of corn or fresh if you have it (organic is usually the sweetest)
Directions:
1. Preheat oven to 350 degrees.
2. Next, melt butter and drain your canned corn (not the cream corn).
3. Now, in a large bowl, add all of your ingredients together and stir well.
4. Place in oven for about 45 minutes, or when your knife comes out of the middle mostly clean. Yep, it’s that easy! The kiddos in your life can even help with this yummy side dish.
