What you need for Homemade
Dairy Free Yellow Cake (Cupcakes):
2 Cups of all-purpose flour
1 teaspoon of salt
2 teaspoons baking powder
½ cup of refined coconut oil
1 and ¼ sugar
3 large eggs
1 teaspoon vanilla extract
1 cup rice milk
Let’s Bake
1. Preheat oven to 350 degrees and line cupcake pan
for about 12-13 cupcakes or use a 9 inch cake pan
(greased), for a two layer cake, use two
round cake pans and double the recipe.
2. Combine flour baking powder and salt in
a bowl and set aside.
3. Using mixer, mix sugar and coconut oil
together (about a couple minutes or so)
*Make sure coconut oil is in liquid form or
very soft before adding to the sugar.
Mixture will look crumbly. Then, add eggs
one at a time and vanilla.
4. Reduce speed of mixer and add a little flour mixture and then
milk and then more flour, alternating until it’s gone. Scrape the
bowl when needed. Batter should be smooth.
5. Fill your cupcake pan, filling each a little over half way.
6. Bake for 20-25 minutes (oven temps may vary). Remove
from oven and carefully take them out and set them on a tray at
room temperature to cool. Frost however you like or not at all.
Admission: If I’m short on time, I use a dairy free ready made
frosting from the store. Below is a ready made frosting that I
added a touch of orange zest and juice to. I love using lemon too!
