Dairy Free Drop Biscuits

This dairy free drop biscuits recipe is my healthier, (and dairy free) version of an old fashioned drop biscuit. Whether topped with honey, jam, or gravy, these please everyone. I often make a double batch for our big crew. They go fast!

Ingredients:

2 cups flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup coconut oil (refined and softened slightly)

2 cups Oat milk or Rice milk (organic)

Instructions:

1.) Preheat oven to 450 degrees.

2.) Combine dry ingredients in a bowl.

3.) Cut in the coconut oil until you have course crumbs.

4.) Stir in milk until dough is formed and comes away from the bowl.

5.) Slightly grease your baking pan with coconut oil (or other oil), and drop heaping tablespoons onto pan about an inch and a half apart.

6.) Bake for 12-15 minutes. Makes 15-20 biscuits.
