Easy and Delicious Breakfast Burritos

These easy and delicious breakfast burritos are a favorite among the teenagers in my house.  One of the great things about burritos is the seemingly endless ways you can create them using a variety of ingredients.  This is a quick and easy version of the ever famous burrito. It’s created just the way my teens love them, without vegetables that is, unless you count the salsa.

Ingredients:

  •  About 6 eggs scrambled to make about 4 large burritos (I use oat or rice milk)
  • Bacon, at least 4 strips (you really can’t cook too much bacon in my house) I use nitrate free naturally smoked pork bacon, or nitrate free sausage links cut up.
  • All American cheese sliced, about 4 pieces.
  • 4 large flour tortillas.  (Tip: look for tortillas that are aluminum free)
  • Homemade or store bought salsa or picante sauce.

Directions:

1.  Warm tortillas over a hot skillet and set aside.

2. Scramble eggs on stove top until fluffy and cooked through.

3.  Meanwhile, fry your bacon until fully cooked and crispy.

4. Now, simply layer your eggs, bacon or sausage, and cheese on top of tortilla and place it in the oven to broil (watch closely), or fold it over in skillet on both sides until cheese is melted. Add salsa if you wish, and experiment with pretty much anything you like. Leave out cheese for a dairy free meal.
