Dairy Free Oatmeal Cookies

I received this Dairy Free Oatmeal Cookies recipe many years ago. I have since tweaked it so that my kiddos with dairy allergies can also enjoy these delicious treats.

Ingredients:

3/4 Cup all-purpose flour

1/4 teaspoon salt

1/2 teaspoon baking soda

1/2 cup refined coconut oil, (soft and creamy, not solid). Warm it a little if it needs to soften.

1/2 cup granulated sugar

1/3 cup brown sugar

1 large egg

2 teaspoons vanilla (FYI: optional, if you’re out, it still tastes good)

1 1/2 cups oats (old-fashioned or quick-cooking)

3/4 cups of raisins

Directions:

1. Preheat oven to 350 degrees and combine flour, salt, and baking powder in bowl and set aside.

2. Mix coconut oil and both sugars until completely combined. About 2 minutes.

3. Add egg and vanilla and mix well until blended.

4. Next, beat in flour mixture on low until blended.

5. Take off of mixer and stir in oats and raisins.

6. Using heaping tablespoons, place dough about 2 inches apart on baking pan (ungreased).

7. Bake for about 13-15 minutes (oven temps may vary), alternating between top and bottom

rack halfway through baking.

FYI: the first batch I bake on the bottom rack the entire time and alternate with the rest.

8. Next, take out and let cool for a couple of minutes. Move them to wire racks to finish cooling.

Dairy Free Oatmeal Cookies

Makes around 18-20 cookies depending on how big you make them. We always make a double batch.

They go fast!!
