Dairy Free Cocoa Cookies

The kiddos and I recently made these dairy free cocoa cookies and they turned out quite delicious!  Due to different allergies in our kids, I often have to think outside the box a bit when baking desserts, so that they can all partake.  These yummy little cookies are soft and have great cocoa flavor, tasting similar to a homemade brownie.  I think they are best when still a little warm from the oven. 

Ingredients:

  • 1 and a half cups of flour
  • 1/4  teaspoon of salt
  • 3 teaspoons of baking powder
  • 1/2 cup of cocoa
  • 1 cup brown sugar
  • 1/2 cup of naturally refined coconut oil
  • 1 large egg
  • 2/3 cup of oat milk

Directions:

1. Heat oven to 400 degrees.

2. Sift flour, salt, baking powder and cocoa and set aside.

3. Blend brown sugar and oil in mixer.

4. Next, add your egg and mix well.

5. Add milk and dry ingredients (alternating each) to your wet mixture, until blended.

6. Drop heaping teaspoons onto ungreased baking sheet or glass pan. Bake for 8-10 minutes.  Do not over bake. Wait a few minutes before removing them to a cooling rack.

*Makes about 48 dairy free cocoa cookies.
