Here is a simple and delicious chicken noodle soup recipe to help you enjoy this comforting classic at home. The days are getting cooler and this warm dish is always a welcomed treat in our family. I will unashamedly admit that I do not make homemade noodles for this dish, I would love to sometime, I just haven’t got around to it. For this recipe, I’ve use dried Amish egg noodles that I really like, though you can buy some frozen noodles as well if you prefer.
*This recipe will be for a large batch, you will have leftovers unless you feed about 8-12 people. Feel free to cut it in half for a family of four, or enjoy the ease of leftovers. *Dried noodles will reheat a bit better than frozen, though either can be used.
Ingredients
- 2 (16oz.) bags of dried egg noodles or 2 (24oz) frozen egg noodles, such as “Raemes”.
- 5 (32oz) cartons of chicken broth (I often use simple truth organic from Kroger or Swanson)
- 2 large chicken breasts halved or 4 small breasts.
- 4 peeled and cut carrots
- 1-2 sliced celery sticks
- 1/2 tsp of Marjoram
- 1/2 tsp of ground sage
- 1 tsp of pink salt (you can of course use white table salt, but it may be saltier)
- 1/2 tsp of ground pepper (I add cracked peppercorn to my own dish before eating)
Directions
1. Heat oven to 375 degrees, season chicken breasts with salt and pepper and bake just until juices are clear.
2. While chicken is in the oven, heat 4-5 cartons of chicken broth in large pot over the stove until boiling. *You can add a little more broth or water to your pot once noodles are done, if you prefer there to be more liquid.
3. Meanwhile, you can cut and peel your carrots and celery. Don’t make them too thin, lest they get overdone (use more or less, whatever your preference).
4. When chicken is done, cut it to your liking. Once your broth is boiling, add your noodles to the pot with all of your other ingredients and let cook for 20-25 minutes or until noodles are tender. Serve with crackers or homemade bread. *Add some cracked peppercorn and extra pink salt to your bowl to suit your taste.
