I was in search of an easy ice cream cake for my son’s birthday and came across this strawberry ice cream cake recipe online at thenovicechefblog.com. Read my final review at the end and what I would do differently next time.
My plan was to make a homemade cake, but after some kids started feeling ill a few days prior to the birthday, I started to look for something easy and fast. I made this cake and another one that I found in the newest “Pioneer Woman Cookbook.” Thankfully, all the kids were well in time for the birthday.
Ingredients:
- One family sized Sara Lee pound cake in the freezer isle.
- One container of strawberry ice cream. (I used Breyers natural ice cream)
- One package of fresh strawberries or frozen. (I used fresh)
- One bottle of chocolate shell topping, found with other ice cream toppings.
Instructions:
1. Cut the pound cake lengthwise into three even layers.
2. Place a large piece of plastic wrap on the bottom of your foil pan that the cake came in. Place one piece of cake on the bottom and spread a layer of strawberry ice cream. Thinly slice some strawberries and place on top of ice cream layer. You could also use strawberry ice cream topping instead. Read review at the end.
3. Place another piece of cake on top and repeat with ice cream and strawberries. After the final layer, I poured chocolate shell topping on top and decorated with more strawberries. I decided to try a strawberry flower for fun.
4. Next, gently fold plastic wrap over the cake and freeze for 2-4 hours.
5. Once set, cut serve and enjoy!
Review
I like the quick and easy prep of this cake. I was fairly happy with how it turned out, however, I would not put the fresh strawberries in the layers again. We found them to be hard on our teeth once frozen, not a pleasant bite. The author of this recipe suggests you could also use strawberry ice cream topping, I would do that the next time or just stick with the ice cream alone. Overall, it was a hit.
