Slow Cooker Pot Roast

Here is an easy and delicious slow cooker pot roast recipe. Pot Roast is really a comfort food classic. It’s a definite favorite in our house. It’s also hearty and filling. Besides a little prep work of peeling and cutting, it’s a pretty simple dish. Using pre-mixed quality seasonings make this dish even easier to pull together.  We often use our Instant Pot that has a slow cooker function, however, any large slow cooker can be used for this recipe, just be sure to keep in mind that temperatures and cook times will vary.   

Ingredients:

  • ~2 lb Chuck Roast (weight may vary)
  • ~2-3 pounds of russet potatoes 
  • ~1 and a half to 2 lbs or carrots 
  • 3-4 celery stalks
  • 32 ounces of beef broth
  • 1-2  1.3 oz. packets of McCormick Slow Cooker Savory Pot Roast seasoning

Directions

1. Peel all potatoes and cut them into at least 2 inch pieces, big enough to where they don’t cook too quickly.  Making larger pieces prevents mushy potatoes during cooking time, same is true for the rest of the vegetables.

2. Cut carrots into at least 1 and 1/2 inch to 2 inch pieces, keeping them farily thick and do the same with the celery. Make them however you like them, just not too tiny because they will be cooking awhile. Place vegetables in the bottom of cooker.

3.  Place roast on top of the vegetables. Next, mix contents of seasoning packs in a bowl with a couple cups of beef broth and pour over meat and veggies.  Make sure to cover roast with plenty of seasoning (use 1-1/2 packs for up to a 2 lb roast, for close to 3lbs or over, use 2 full packets).

4. Pour remaing broth into crock pot with your meat and veggies. The broth will make a great gravy for your roast. Set on high for 6-8 hours until tender.  Cooking times will vary.
