Years ago we started making homemade dairy free waffles so that everyone in our family could enjoy them. My husband is usually the waffle cook. Even back when we were dating I remember him making me homemade waffles, I hadn’t had them until then. These days we make them dairy free and double, sometimes triple our recipe.

Ingredients
- 2 cups all purpose flour
- 1 and a half teaspoons of baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon of salt
- 2 cups of organic Rice Milk
- 2 large eggs, lightly beaten

Directions
1.) Preheat waffle maker as directed. Combine dry ingredients in a large bowl.
2.) Add milk and eggs to batter and mix by hand.

3.) When waffle maker is heated, spray on some non-stick spray. Pour some batter in the middle of your waffle maker until it gets about an inch or so from the edges. Close it and do not open until they are done (about 4-5 minutes or according to your maker’s instructions).

4.) Open your maker when they are done. Use a fork, or other utensil to gently lift waffle off. Serve right away with your favorite toppings. Makes five to six 7″ homemade dairy free waffles.
