Here’s how we make fried Chicken of the Woods. Chicken of the Woods is a tasty and nutritious mushroom that can be found growing on the sides of dead or dying trees. You can use as a substitute in many of your favorite chicken dishes. One way we love it, is fried!
Ingredients
- Some fresh or thawed Chicken of the Woods, cleaned and cut into strips.
- Vegetable oil for frying
- 1/2 cup coconut or rice flour
- 1/2 cup all purpose flour
- 1 tsp. seasoning salt
- 1/2 tsp. black pepper
- 1/8 tsp. cayenne
- 2 eggs
- 1/4 cup milk (oat milk for dairy-free)
Directions
2. Combine all purpose flour, coconut flour, seasoning salt, black peeper and cayenne in a bowl and stir until well blended.
3. Prepare an egg wash for the mushrooms by whisking milk and eggs until thoroughly blended.
4. Place mushrooms into flour mixture and thoroughly coat. If the flour mixture is not sticking to the mushrooms, moisten the mushrooms by rinsing under cold water.
5. Take coated mushrooms and place them in the egg wash. Allow them to sit in the egg wash for a minute or so to get well coated
6. Put mushrooms back into flour mixture and thoroughly coat.
7. Place coated mushrooms into hot oil and fry for 3-5 minutes, turning halfway through to brown both sides.
8. Once golden brown, remove from oil and place on wire rack to cool a bit and let some of the excess oil drain off.
