This quick and easy salsa chicken recipe is always a hit in our home. I often serve it with tortillas, black beans or fresh corn and rice to make a complete and delicious meal.
Ingredients
- 4-6 boneless chicken breasts
- 1-1 and a half Tablespoons of your favorite taco seasoning
- 1 16 ounce jar of salsa (I usually use Pace Picante sauce)
- 1/2-3/4 cup of colby jack or medium cheddar shredded cheese
- Optional: black beans or corn, organic white rice/other, tortillas and sour cream
Directions
1.) Preheat oven to 375 degrees
2.) Place chicken breasts in pan and spread taco seasoning evenly over chicken (both sides if you like)
3.) Pour salsa over the top of chicken, covering most the chicken.
4.) Place foil over chicken and bake for 25-30 minutes, or until juice is clear and chicken is no longer pink. Oven temps may vary.
5.) Once chicken is done, remove foil and sprinkle cheese over chicken and put back in for 1-2 minutes, until melted. For a dairy free dish, simply omit the cheese.
6.) Add desired sides and enjoy!
