Here is a super easy ice cream cake recipe that I tried from the newest “Pioneer Woman Cookbook.” One of my son’s asked for an ice cream cake for his birthday, and I was planning on making a homemade one. However, a few days prior when kids starting feeling ill, I searched for some easier options. Luckily all kids were well in time for the birthday. This is one of the cakes I made.
Ingredients:
- One family sized Sara Lee pound cake from the freezer isle.
- One container of vanilla ice cream.
- One container of chocolate ice cream.
- 2 small packages of M & M’s and any other candy you want to try.
- Optional: Chocolate shell ice cream topping.
Instructions:
1. Place M & M’s in a plastic bag and crush them a bit, then carefully cut your pound cake into three even layers.
2. Line the foil container that the cake came in with a large piece of plastic wrap. Insert one layer of cake, gently press it down and spread chocolate ice cream over it. It helps if the ice cream is a little on the soft side. After layering with ice cream, sprinkle a third of your candy over the top.
3. Place the next layer of cake on, gently pressing down a little. Add a generous layer of vanilla ice cream and sprinkle half of the remaining candies.
4. I told you this was going to be easy. Next, simply add the last layer of cake to the top, pressing down gently. Top with more chocolate ice cream and remaining candies. Then carefully place plastic wrap over the top, and sit in the freezer for at least 3-4 hours for best results.
Optional: In the video below she pours chocolate shell topping over the top layer before adding the remaining candies. I did not do this. I don’t remember that being a step in the cookbook version, but the video is a bit different.
Also, she added Reese’s Peanut Butter cups. I, of course, left this out because we have peanut allergies in the home. You could, however, add just about anything, and come up with your own creation.

What I liked about this recipe was the super fast prep time. It was pretty tasty, even though I’m not a fan of store bought cake. The only negative would be, it’s not very healthy, but hey it’s a birthday. My son was pleased.
