Here is an easy herb roasted potatoes recipe. I love experimenting with potatoes, however, many times I find that the simplest of recipes often become some of our favorites. Deliciousness does not have to be complicated.
Ingredients:
- 4 medium-large white or red potatoes (makes a side dish for about 4-6)
- Italian seasoning
- Himalayan pink salt (if using regular white salt, you’ll want to use less)
- black pepper (cracked or ground)
- pure olive oil (you can use vegetable oil for more of a crunch, but it will lack a little flavor)
- green onions or dried chives (optional for topping)
Directions:
1. Preheat oven to 425 degrees. Dice potatoes and place in a bowl, freezer bag, or mix them right in your baking pan.
2. Drizzle or spray olive oil over potatoes and season with black pepper and salt. Sprinkle Italian herb seasoning over the potatoes and mix well (or shake if you wish to use a freezer bag).
3. Next, spread out potatoes in a glass pan (or your preferred pan). Place in heated oven and bake for at least 20 minutes or until lightly browned and tender. Flip and stir potatoes a few times during baking. Take out and enjoy. Garnish with chives or fresh green onions if you wish. Try serving them with ranch dressing, cheese, catsup etc….or eat them just as they are.
