Ok, so I love Mexican food! I especially love quick meals that I can put together using fresh ingredients and these easy beef and bean tostadas are one of them. Everyone in our home likes tostadas and they can be easily made without dairy or wheat, so that’s a win for me. You can really get creative with a tostada. This is a recipe where I use a few simple ingredients, but honestly you could come up with almost endless versions of your own depending on your taste buds.

Ingredients:
- 1 package of corn tostada shells
- 1 can of re-fried pinto or black beans
- 1 lb. of ground beef
- 1 Tablespoon of your favorite taco seasoning
- lettuce
- freshly diced Roma tomatoes
- medium cheddar shredded cheese
- taco sauce or salsa
- sour cream
- sliced avocado
Directions:
1.) Brown 1 pound of ground beef in skillet and season with your favorite taco seasoning.
2.) Heat re-fried pinto or black beans.
3.) Wash and prepare desired toppings.
4.) Heat oven to 350 degrees and layer your tostada shells with beans, beef and cheese.
5.) Place in oven and heat until cheese is just melted. Take out and layer with desired toppings.
